金合利鋼刀的故事


清光緒年間刀業始祖吳宗山君習藝於廈門,專營打鐵及農具鍛造;至吳朝熙君承襲家業,於西元一九三七年創建金合利製刀廠並設址金城吳厝,悠悠已逾七十寒暑。


日據時代物料短缺,鋼材輸入資費驚人,吳君初取盟軍轟炸遺留砲彈殼試鍛刀具,是為鋼刀起源。期間吳君更秉持祖訓,不畏路遙肩挑鐵爐,遍訪全島服務桑梓,「打鐵師」盛名令童叟皆知。


後金門久遭對岸砲火洗禮,歷經「八二三砲戰」等多次戰役,承受達百萬發砲彈,猛烈程度堪稱戰史之最,卻意外為製刀業留下取用不盡之材。吳君乃有計畫蒐購全島廢彈殼,運用巧思發揮刀藝,鍛造出馳名中外的「金門鋼刀


今日「金門鋼刀」已享譽全台,刀廠傳人吳增棟君力圖將之推向國際舞台,為防贗品混充,首創開放現場指定砲殼製刀之先河,獨特的承製方式讓鋼刀倍添風采

ABOUT MAESTRO WU HAND FORGES KNIVES

Maestro Wu hand forges knives from salvaged artillery shells fired on Taiwan by mainland China since the early 1900s. The steel from these shells is strong, ensuring blades are resilient and less likely to rust or chip. These knives are highly regarded worldwide by the Taiwanese diaspora for quality and craftsmanship.

The Maestro Wu Chinese Chef's Knife is designed for slicing vegetables and chopping meats, incredibly versatile with a pronounced rocking motion and pointed tip. The Maestro Wu Meat Cleaver is recommended for chopping through bones, pairing well with the Chef's Knife.

Maestro Wu Knives has been operating on Kinmen island since the 1930s, crafting knives from spent artillery shells. Despite material shortages during WWII, they continue to use these shells, many fired during the Second Taiwan Strait Crisis in 1958.
